1/2 lb Macaroni Noodles
5TBSP Butter
6TBSP Flour
Melt the butter then slowly add flour to make a roux.
3 Cups Milk
Slowly add milk to roux and mix til smooth
2oz Velveeta Cheese
6-9 oz Sharp Cheddar Cheese
2oz White Cheddar
1oz Parmesan Cheese
2 Cloves Black Garlic (you can use regular Garlic)
1 Shallot (chopped and canalized)
These Spices I added but didn't measure out add a little at a time to taste
Paprika
Cayenne Pepper
Salt
Pepper
Essence of Emeril
Melt all together in the milk mixture
Topping
1/2 Cup Panko Bread Crumbs
1/2 Cup French Fried Onions chopped up
1/3 Cup White Cheddar
1/8 Cup Parmesan Cheese
1tsp Essence of Emeril
This is a multi-person blog. My friends and I are doing this together in order for us to share our recipes and ideas on how to make good food and how to make it better. We have all been friends for 16 plus years and are now spread out all over the U.S. Some of us are better cooks then others and some of us are better eaters. Hopefully we will show a wide range of flavors and and ease of meals that will make dinner time no longer tedious and frustrating.

Dinner Idea 3 - Buckwheat Noodle Stir Fry
Items needed:
Buckwheat Chow Mein Noodles (or regular if you prefer)
1 of each red, green, orange and yellow bell pepper
3-4 green onions
1/4 of red cabbage sliced thin
1/4 of green cabbage sliced thin
2 stalks of celery cut in half and chopped
1 crown of broccoli cut up
Spinach (add towards end so it doesn't wilt)
Kale (add towards the end so it doesn't wilt)
1 packet of Kikkoman Stir Fry seasoning
You can add chicken if you would like, can't remember if I did. Or you could always cut up firm tofu to add to the stir fry as well.
Cook chow mein noodles to package instructions. Most will say bring pot of water to rolling boil and place noodles in water. Bring noodles back to a rolling boil, almost boiling over and add 1 cup cold water. Return noodles to rolling boil and shut stove off. Rinse immediately in cold water.
Stir-fry
Add oil to pan, I used sesame oil, and begin sauteing all produce listed. Add in the Kikkoman Stir Fry seasoning according to directions.
We just ate the stir-fry and nothing else.

Dinner Idea 2 - Salsa Style Chicken and Spanish Rice
Food Needed:
Olive Oil
Balsamic Vinegar
Chicken tenders 8-10 (depending on how many you are serving)
1-2 cans Diced Tomatoes with jalapenos
Tomato sauce
2-3 Garlic cloves
Rice
1/4 Green Bell Pepper
1/4 Onion
For the Chicken:
Put a small amount of oil and balsamic in a skillet, warm. Place chicken in the balsamic and cook a little. Pour contents of one can of diced tomatoes and pressed garlic on top of the chicken and cook on med/low, slowly.
For the Rice:
I used my rice cooker. Cut up bell pepper and onion and place in cooker, if using stove top saute with a little oil. Place rice in cooker or pan, add half can of diced tomatoes and a little bit of tomato sauce for color.
I also did a mixed greens salad with this meal.

Dinner Ideas 1 - Mediterranean Pasta & Chicken
Okay girls I know Amy was saying that Katie is looking for new dinner ideas so here are a couple to come.
First Mediterranean Pasta with Garlic Chicken
Garlic Chicken Breasts
Saute in small amount of oil 2-4 cloves of garlic depending on size
Season chicken breasts with garlic powder and parsley flakes and place with sauteed garlic to cook
Mediterranean Pasta
I used Penne pasta, but you can use what ever your favorite is, will work any.
In a small skillet place 1/2 cup of italian salad dressing (I used a parmesan garlic as that is what I had), 1/2 cup of chopped/slice olives, fresh garlic minced, 1 tomato cut into pieces ( I used grape tomatoes and golden grape tomatoes sliced in half), saute all together until warm/hot.
Note: I added a little balsamic vinegar to the mixture.
Once all items have been cooked and plated sprinkle a little Feta over the top and wa-la dinner is done.
I also did a nice mixed greens salad with this.
