I got this off of Sandra Lee's Show really simple but adds a whole different flavor.
2 TBSP Butter
1 Frozen Package or Can of Corn (Drained)
Melt the butter add the corn turn on Med to Med High. Stirring occasionally til the corn caramelizes and starts to turn brown.
Use as is or add it to your tacos or whatever recipe you use corn
This is a multi-person blog. My friends and I are doing this together in order for us to share our recipes and ideas on how to make good food and how to make it better. We have all been friends for 16 plus years and are now spread out all over the U.S. Some of us are better cooks then others and some of us are better eaters. Chili Frito Salad
1 can corn (drained)
1/4 c diced green bell pepper
1/4 c diced shallot (or you could use red onion)
1/2 c shredded cheese (you can add more if you like)
1/3 c mayo
Mix it all together and just before serving add crumbled up Chili Frito's

French Onion Mashed Potatoes
You will actually get 2 recipes here.
First is the all time favorite...French Onion Dip
1 package French Onion Soup Mix
16 oz Sour Cream
Mix both together and you have a great dip for an appetizer or a little snack.
Second as a side dish we'll take that dip and make mashed potatoes.
(for 4 adults this made plenty and had leftovers)
3 large potatoes (peeled and cut into chunks(cuts down on cooking time))
1 TBSP Garlic Salt added to the boiling water
Cook potatoes until tender and easy to mash.
the rest of the ingredients are to taste and depending on the amount of potatoes

1/2 cup French Onion dip
1 tsp salt
Add more milk if needed to make them creamy.

Spaghetti Olie e Aglio
1 lb Spaghetti Noodles (cook)
1/2 Cup Olive Oil (heat up in a pan)
3 Garlic Gloves (finely chopped)(add to the oil constantly stirring so not to brown the garlic 3-4 min.)
*Drain pasta and transfer it to a serving dish. Pour oil over the top and sprinkle with the parsley.
3 TBSP chopped fresh Parsley
This was good a nice light side dish. I would however add bacon next time.
